Chapter 40, Matt’s Adventures in the ARU. Tuesday nite, Aug. 9, 2022 A Day in the Life at ARU with Matty Matt
Today Matthew fired his nurse. I asked him why he did this and with a smile on his face he said, “Because she was feisty”. After my last visit with Matt five days ago, I see significant improvements with his cognitive and physical abilities.
Today he started asking me questions about his accident. Matt is remembering more and more and asking questions. Matthew sat in his wheelchair for a long time today, about two hours. Sarah made two movies of Matthew today. One for his uncle & one for his mother.
This weekend there was an impromptu meeting of some of Matt’s friends (about 15) at Beer 30, a pub & outdoor bar in Santa Cruz. Everyone sat around a table & introduced themselves & talked about how they came to know Matthew. Maybe this can become a weekly ritual.
Cooking for Matthew – Salmon Bisque Coconut Soup.
For lunch and dinner today I made Matt salmon bisque coconut soup. I sautéed green onion, white onion, Swiss chard, turmeric, ginger, roasted red pepper, & cilantro in ghee. Then I added coconut milk, lemon grass, cinnamon, and grilled wild salmon. When Matt tasted the food, he almost stood up and walked out of ARU. He didn’t actually but my intention was to make vital, nourishing & healing foods that invigorated him and remind him of his life before July1, 2022.
Matt really enjoyed his homemade comfort food today. I promised him that I will bring him a blended Vietnamese Pho lunch one of these days. Pho is a favorite of Matt’s. Has everyone tried that?
I also brought fresh pressed juice of carrot, beet, celery, lemon, ginger, and apple. He drank the entire jar. Then he informed me next time add more apple juice! Matthew and I this past year have had the tradition of gathering weekly to juice. I was happy to make & share this with him once again.
I know we are all hopeful of seeing Matt soon and spending time with him in our own special and dynamic ways. My last words for today are, “I am so happy that you are still with us Matty Matt”.
Today was a day of laughter with Matthew. And joy.
