Today is National Chocolate Day.
Anything chocolate – like a chocolate ice cream soda.
Like a chocolate cake, chocolate ice cream.
Chocolate Cream Soda.
Recipe:
In four 16-ounce old gashioned ice cream soda glasses, squirt 1 tablespoon of chocolate syrup (Hershey’s, Fox’s, home made, etc.) in bottom of the glasses.
Add 2 scoops of ice cream in each soda glass.
Twith another tablespoon of the chocolate syrup.
Fill each glass with club soda.
Top with whipped cream and a cherry.
Straw.
More Chocolate.
Chocolate pudding, Chocolate cookies. Chocolate fudge.
Chocolate mousse. Ganache.
Hot fudge sundae….Everything Chocolate!
Mole has chocolate in it, as a subtle umami shadow flavor.

Recipes
Chocolate Cocoa Espresso Cake
From the Ashram Cookbook (being created now).
A recipe (with my adaptions in parens)
Heat oven:325 degrees.
Butter round or square pan
Ingredients
Dry –
• 1¼ cups all-purpose flour
(I sub 1/2 cup almond flour & the rest Einkorn flour)
• 1 cup sugar
(I lessen sugar in all recipes – here I only use 1/2 – 2/3 c. coconut sugar)
• ⅓ cup unsweetened cocoa powder (I use close to 1/2 c.).
• ¾ tsp. baking soda
• ½ tsp. salt
Combine dry ingredients. Set aside.
Liquid Ingredients
Combine in a separate bowl.
– – ⅓ cup oil
(I use 1/2 applesauce & 1/2 butter or avocado oil to equal 1/3 cup)
– – I cup of water, milk or coffee
(I use 1/2 espresso, 1/2 milk)
• 2 tsp. vanilla extract
• 1 tsp. apple cider or white vinegar
•
Options to add –
– – 1/2 cup chocolate chips.
– – 1 cup roasted chopped nuts (pecans, walnuts, etc.).
– -Confectioners’ sugar, to dust top of cake.
Directions
Heat oven 325.
Butter a round or 8×8 square baking dish.
Dust w/ cocoa.
Combine dry ingredients in a bowl. Whisk in nuts if using.
Combine liquid ingredients in a bowl. Whisk together.
Combine dry with liquid ingredients.
Mix till a smooth batter appears.
Pour bater into prepared baking pan.
Top w/ chocolate chips (if using).
Bake for 30 minutes, or until toothpick inserted in center of cake
comes out clean.
Cool on baking rack for 15 minutes.
Top w/ confectioners’ sugar when cake is cool.
Serve with vanilla ice cream.
